  • 1 cup red wine (Cabernet Sauvignon)
  • 4 medium carrots, chopped
  • 2 large yellow onions, diced
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 2 tsp dried thyme (or 4 sprigs fresh thyme)
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chuck roast with salt and pepper, then sear until browned on all sides (about 4 minutes per side). Remove from pot.
  2. Add onions and garlic to the pot; sauté until translucent (about 2 minutes).
  3. Pour in red wine, scraping up brown bits from the bottom. Simmer for about 5 minutes.
  4. Return beef to the pot along with carrots and beef broth. Add thyme and bay leaves, then bring to a gentle simmer.
  5. Cover tightly and cook on low heat for 2-3 hours until beef is fork-tender. Adjust seasoning before serving.
