Instructions
- Wash and halve the baby potatoes. Pat the chicken breasts dry.
- Season both sides of the chicken with salt, pepper, and Italian seasoning.
- In a large skillet over medium-high heat, add olive oil and butter. Once hot, sear the chicken for about 5-7 minutes on each side until golden brown.
- Add the halved potatoes to the skillet and stir gently to combine.
- After about five minutes, add minced garlic and sprinkle Parmesan cheese over everything.
- Cover the skillet with a lid, reduce heat to low, and simmer for another 10 minutes until the chicken is cooked through (165°F) and potatoes are tender.
