  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb baby potatoes, halved
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Wash and halve the baby potatoes. Pat the chicken breasts dry.
  2. Season both sides of the chicken with salt, pepper, and Italian seasoning.
  3. In a large skillet over medium-high heat, add olive oil and butter. Once hot, sear the chicken for about 5-7 minutes on each side until golden brown.
  4. Add the halved potatoes to the skillet and stir gently to combine.
  5. After about five minutes, add minced garlic and sprinkle Parmesan cheese over everything.
  6. Cover the skillet with a lid, reduce heat to low, and simmer for another 10 minutes until the chicken is cooked through (165°F) and potatoes are tender.
