Ingredients

Scale
  • 1 cup orzo pasta
  • 8 oz Italian sausage (mild or spicy)
  • 3 cloves fresh garlic (minced)
  • 1 cup Parmesan cheese (freshly grated)
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 2 cups fresh spinach (optional)

Instructions

  1. Prepare the ingredients by chopping any vegetables and rinsing spinach if using.
  2. In a large skillet over medium heat, add olive oil and crumble in the Italian sausage. Cook until browned, about 5-7 minutes.
  3. Stir in minced garlic and sauté until fragrant, about 1 minute.
  4. Add chicken broth and bring to a gentle boil. Stir in orzo pasta; reduce heat to low, cover, and cook for 10-12 minutes until orzo is tender.
  5. Remove from heat and mix in grated Parmesan cheese until melted and creamy. If using spinach, add it now to wilt.
  6. Serve warm with an extra sprinkle of Parmesan on top.
