- 2 lbs Yukon Gold potatoes
- 4 cloves fresh garlic, minced
- 1/2 cup unsalted butter
- 1/2 cup grated parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Boil the potatoes: Wash and peel the Yukon Gold potatoes, cut them into quarters, and cook in salted boiling water until fork-tender (15-20 minutes). Drain and let steam dry.
- Make garlic butter: Melt butter in a small saucepan over low heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Smash the potatoes: Return cooked potatoes to the pot and smash gently using a potato masher or fork.
- Combine flavors: Drizzle garlic butter over smashed potatoes, add parmesan, season with salt and pepper, and gently mix.
- Bake: Preheat oven to 425°F (220°C). Spread potato mixture on a baking sheet lined with parchment paper, drizzle with olive oil, top with extra parmesan, and bake for 20-25 minutes until golden brown.
