Ingredients

Scale
  • 2 lbs starchy potatoes (Russets)
  • 6 whole garlic cloves
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 400°F (200°C). Wrap garlic cloves in foil and roast for 30 minutes.
  2. Peel and cube the potatoes. Boil in salted water for 15-20 minutes until fork-tender.
  3. Drain potatoes and let cool slightly. In a mixing bowl, mash with roasted garlic, olive oil, salt, and pepper until smooth yet slightly chunky.
  4. Form the mixture into small balls (about 1 inch in diameter). Optionally roll in breadcrumbs for extra crunch.
  5. Place on a greased baking sheet and bake at 425°F (220°C) for 25-30 minutes until golden brown.
