  • 2 lbs Yukon Gold Potatoes, diced
  • 6 oz thick-cut Bacon, chopped
  • 1/2 cup Red Onion, finely chopped
  • 1/2 cup Apple Cider Vinegar
  • 2 tbsp Dijon Mustard
  • 1/4 cup Fresh Parsley, chopped

Instructions

  1. Boil the diced Yukon Gold potatoes in salted water until fork-tender (15-20 minutes). Drain and let cool slightly.
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Remove bacon but reserve drippings.
  3. In the same skillet with drippings, add apple cider vinegar, Dijon mustard, and red onion; stir over low heat for about 2 minutes.
  4. Cut the cooled potatoes into bite-sized pieces and combine them in a large bowl with the dressing mixture and crumbled bacon. Toss gently.
  5. Garnish with freshly chopped parsley. Serve warm or chill in the fridge for at least an hour before serving.
