  • 1 ½ cups ginger snap cookies (crushed)
  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (room temperature)
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 3 large eggs
  • 2 tsp ground ginger
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed ginger snaps with melted butter and press into the bottom of a springform pan.
  2. Bake crust for 10 minutes; let cool.
  3. In a bowl, beat cream cheese and sour cream until smooth. Add sugar, eggs, ginger, cinnamon, nutmeg, and vanilla; mix until combined.
  4. Pour filling over cooled crust and bake at 325°F (160°C) for 50-60 minutes until set but slightly jiggly in the center.
  5. Cool at room temperature before chilling for at least four hours or overnight.
