  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¾ cup brown sugar
  • 3 large eggs
  • 1 cup whole milk
  • 1 can (14 oz) sweetened condensed milk
  • ½ cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a rectangular baking dish.
  2. In a large bowl, whisk together flour, baking powder, ground ginger, ground cinnamon, and brown sugar.
  3. In another bowl, beat eggs until frothy; add whole milk and vanilla. Mix wet ingredients into dry until just combined.
  4. Pour the batter into the prepared dish and bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  5. While cooling, whisk together sweetened condensed milk, regular milk, and heavy cream.
  6. Poke holes in the cooled cake using a fork. Pour the tres leches sauce over the cake and let it soak.
  7. Top each slice with freshly whipped cream before serving.
