- 4 oz glass noodles
- 1 cup firm tofu, cubed
- 1 cup bell peppers (mixed colors), chopped
- 1 cup cucumber, thinly sliced
- 1 cup carrots, julienned
- 1/4 cup fresh cilantro, chopped
- 1/4 cup peanut butter
- 2 tbsp soy sauce (or gluten-free alternative)
- 2 tbsp lime juice
- 1 tbsp honey or maple syrup
- 1 tbsp water
Instructions
- Soak the glass noodles in hot water for about 15 minutes until softened. Drain and set aside.
- In a pan over medium heat, sauté cubed tofu in olive oil until golden brown (about 10 minutes).
- While tofu cooks, chop bell peppers, cucumber, carrots, and cilantro.
- In a bowl, whisk together peanut butter, soy sauce, lime juice, honey/maple syrup, and water until smooth.
- In a large bowl, combine softened glass noodles, cooked tofu, chopped veggies, and dressing. Toss gently to coat evenly.
- Serve immediately or chill for 30 minutes to enhance flavors; garnish with extra cilantro if desired.
