  • 1 lb ground lamb or beef
  • 1/2 cup panko breadcrumbs
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 1 large egg
  • 2 cups Greek yogurt
  • 1 medium cucumber, grated and drained
  • 2 tbsp lemon juice
  • 1 cup cherry tomatoes
  • 1 medium red onion, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Prepare tzatziki: In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and dill. Refrigerate.
  2. Mix meatball ingredients: In a large bowl, combine ground meat, breadcrumbs, garlic, parsley, mint, egg, salt, and pepper. Mix gently.
  3. Shape meatballs: Preheat oven to 400°F (200°C). Form mixture into golf-ball-sized meatballs and place on a lined baking sheet.
  4. Bake: Cook meatballs for 20-25 minutes until golden brown.
  5. Roast veggies: On another sheet, toss cherry tomatoes and red onion with olive oil; bake alongside meatballs for about 15 minutes.
