  • 1 lb lean ground beef or lamb
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 cucumber, grated
  • 1 cup full-fat Greek yogurt
  • 1 cup long-grain rice (jasmine or basmati)
  • 1 cup cherry tomatoes, halved
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a large bowl, mix ground meat, breadcrumbs, parsley, garlic, salt, and pepper until just combined.
  2. Form into golf-ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Bake for 20-25 minutes until internal temperature reaches 160°F (70°C).
  4. While baking, prepare tzatziki by squeezing excess moisture from grated cucumber and mixing with yogurt, garlic, lemon juice, salt, and pepper.
  5. Cook rice according to package instructions.
  6. Assemble bowls by layering rice, meatballs, tzatziki, and topping with cherry tomatoes and other veggies.
