Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 bell peppers (any color), cut into 1-inch pieces
- 1 red onion, cut into wedges
- 1 medium zucchini, sliced into thick rounds
- 2 tbsp olive oil
- 1 tsp garlic powder
- 2 tsp smoked paprika
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- In a large bowl, whisk together olive oil, garlic powder, smoked paprika, salt, pepper, and lemon juice.
- Cut chicken into bite-sized pieces and add to the marinade. Mix well and let marinate for at least 30 minutes.
- While marinating, chop bell peppers, red onion, and zucchini.
- Assemble the kabobs by threading the marinated chicken and vegetables onto skewers alternately.
- Preheat the grill to medium-high heat (about 400°F).
- Grill kabobs for 10-15 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F.
