  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 1 medium zucchini, sliced into thick rounds
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. In a large bowl, whisk together olive oil, garlic powder, smoked paprika, salt, pepper, and lemon juice.
  2. Cut chicken into bite-sized pieces and add to the marinade. Mix well and let marinate for at least 30 minutes.
  3. While marinating, chop bell peppers, red onion, and zucchini.
  4. Assemble the kabobs by threading the marinated chicken and vegetables onto skewers alternately.
  5. Preheat the grill to medium-high heat (about 400°F).
  6. Grill kabobs for 10-15 minutes, turning occasionally until the chicken reaches an internal temperature of 165°F.
