  • 4 large flour tortillas
  • 1 cup bell peppers (mixed colors), sliced
  • 1 cup zucchini, thinly sliced
  • 1/2 cup red onion, sliced
  • 1/2 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. Wash and slice the bell peppers, zucchini, and red onion into bite-sized pieces.
  3. In a skillet, heat olive oil over medium heat. Add sliced vegetables along with salt, pepper, and oregano. Sauté for about 8 minutes until tender.
  4. Spread sautéed veggies on half of each tortilla and sprinkle with feta cheese. Fold tortillas in half.
  5. Grill each quesadilla for approximately 3 minutes per side until golden brown and crispy.
  6. Let cool slightly before slicing into wedges. Serve warm with salsa or yogurt dip.
