  • 1 lb large shrimp (peeled)
  • 1 lb white fish fillets (like cod or halibut)
  • 2 ears corn on the cob (cut into 1-inch rounds)
  • 1 red bell pepper (cut into large chunks)
  • 1 medium zucchini (sliced into thick rounds)
  • 3 cloves garlic (minced)
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Sea salt and pepper (to taste)
  • 2 tsp dried oregano
  • 1 tsp crushed red pepper flakes

Instructions

  1. Prepare all vegetables by washing and cutting them as directed.
  2. In a large bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, pepper, and crushed red pepper flakes.
  3. Add shrimp and fish to the marinade; toss gently to coat. Let marinate for 15-30 minutes.
  4. Thread shrimp, fish, corn, bell peppers, and zucchini onto skewers alternately.
  5. Preheat grill to medium-high heat (400°F). Lightly oil grill grates to prevent sticking.
  6. Grill skewers for 10-12 minutes, turning occasionally until seafood is cooked through with char marks.
