  • 1 lb lean ground beef
  • 2 medium zucchinis, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and chopping the zucchini and sweet potatoes into bite-sized pieces. Dice the onion and mince the garlic.
  2. In a large skillet over medium heat, add olive oil. Once hot, sauté onion and garlic until fragrant (about 2 minutes).
  3. Add the sweet potatoes to the skillet and cook for about 5 minutes until they start to soften.
  4. Push veggies aside and add ground beef on the empty side of the skillet. Cook until browned (about 5 minutes), breaking apart as it cooks.
  5. Combine all ingredients in the skillet and season with paprika, Italian seasoning, salt, and pepper. Stir well.
  6. Add zucchini, cooking for an additional 5 minutes until tender but still slightly crunchy.
  7. Serve directly from the skillet or transfer to plates.
