  • 3 tablespoons harissa paste
  • 6 ounces goat cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh herbs (parsley or cilantro), chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and pierce each sweet potato multiple times with a fork.
  2. Place the sweet potatoes on a lined baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 45-50 minutes until tender.
