  • 1 cup finely chopped Brussels sprouts (about 810 sprouts)
  • 1/2 cup plain or Italian breadcrumbs
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 cup tomato sauce
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground beef, Brussels sprouts, breadcrumbs, garlic, egg, Parmesan cheese, and parsley. Mix gently until just combined.
  3. Form the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 20-25 minutes or until golden brown and cooked through.
  5. While baking, heat olive oil in a saucepan over medium heat. Add tomato sauce and simmer for about five minutes.
  6. Serve the meatballs drizzled with warm tomato sauce.
