Ingredients

  • 8 oz pasta (penne or fusilli)
  • 1 cup low-fat cottage cheese
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp extra virgin olive oil

Instructions

  1. Boil salted water in a large pot. Cook pasta until al dente, drain, and set aside.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for about one minute.
  3. Add spinach to the skillet and stir until wilted (about two minutes).
  4. Lower heat, mix in cottage cheese and Parmesan until creamy.
  5. Combine the cooked pasta with the sauce, tossing gently to coat. Add reserved pasta water if needed.
  6. Serve warm, garnished with extra Parmesan.
