  • 1/4 cup rice vinegar
  • 1 ripe avocado, sliced
  • 8 tempura shrimp, pre-cooked
  • 4 nori sheets
  • 1/4 cup mayonnaise mixed with sriracha (spicy mayo)
  • low-sodium soy sauce

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions, then mix in rice vinegar while warm. Let cool slightly.
  2. Slice avocado into thin strips and prepare any additional fillings like cucumber or crab sticks.
  3. On a bamboo mat covered with plastic wrap, lay a nori sheet shiny side down. Wet your fingers and spread a handful of sushi rice evenly on the nori, leaving an inch at the top edge.
  4. Layer avocado slices and tempura shrimp across the center of the rice. Drizzle with spicy mayo if desired.
  5. Roll tightly from the edge closest to you while tucking in the filling with your thumbs. Seal the edge with water.
  6. Slice into bite-sized pieces using a sharp knife dipped in water, then serve with soy sauce and extra spicy mayo.
