  • For the Frosting: 8 oz cream cheese (softened)
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake tray with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. In another bowl, cream together softened butter and sugar until light and fluffy. Add honey and mix well.
  4. Beat in eggs one at a time followed by vanilla extract.
  5. Gradually combine dry ingredients into the wet mixture, folding in diced peaches gently.
  6. Spoon batter into prepared liners and fill two-thirds full. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  7. Cool before frosting with cream cheese icing made by beating together softened cream cheese, powdered sugar, and vanilla extract until smooth.
