Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar, then mix in pumpkin puree, eggs, vanilla extract, cinnamon, and nutmeg until well combined.
  3. Pour the filling into the crust and smooth the top. Bake for about 60 minutes or until slightly jiggly in the center.
  4. Turn off the oven and leave the door cracked open; let cool for an hour before refrigerating for at least four hours or overnight.
  5. Remove from the springform pan, decorate with whipped cream and sprinkles if desired, slice, and serve.
