Ingredients

  • 2 ripe mangoes (about 400g)
  • 1 cup full-fat coconut cream (240ml)
  • 2 tbsp honey or maple syrup (30g)
  • 100g dark chocolate (for coating)
  • ¼ cup toasted coconut flakes (20g) – Optional

Instructions

  1. Peel and chop the mangoes into chunks. Blend until smooth to create a puree.
  2. In a bowl, combine the mango puree, coconut cream, and sweetener. Mix well until smooth.
  3. Pour the mixture into molds or ice cube trays and insert sticks. Freeze for 4-6 hours or until solid.
  4. Melt the dark chocolate in a microwave-safe bowl or over a double boiler.
  5. Once frozen, remove the pops from their molds and dip each into melted chocolate quickly.
  6. Place back on parchment paper and freeze for an additional hour to set before serving.
