  • 1 lb lean ground chicken
  • 1 cup panko breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 large egg
  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • 14 oz canned diced tomatoes
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground chicken, panko breadcrumbs, parsley, garlic, egg, salt, and pepper until well combined.
  3. Shape the mixture into golf ball-sized meatballs and place them on the prepared baking sheet.

  6. In a skillet over medium heat, add olive oil and diced tomatoes; simmer for five minutes while seasoning with salt and pepper.
