  • 1 lb flank or sirloin steak
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 1 small red onion
  • ½ cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 whole wheat pita breads

Instructions

  1. Marinate the Steak: Combine olive oil, lemon juice, garlic (2 cloves minced), salt (1 tsp), and pepper (½ tsp) in a bowl. Add steak and let marinate for at least 30 minutes.
  2. Prepare Veggies: Chop cherry tomatoes, cucumber, and red onion into bite-sized pieces. Set aside in a large bowl.
  3. Cook the Steak: Heat grill or skillet over medium-high heat; sear marinated steak for 4-5 minutes per side until browned and cooked to your preference.
  4. Create Dressing: Whisk together additional olive oil (1 tbsp) and lemon juice (1 tbsp) with salt (to taste) and pepper (to taste).
