  • 2 tsp baking powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1 fresh pineapple ring per cake

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin with nonstick spray.
  2. In a saucepan, melt butter and brown sugar over low heat until bubbly. Pour into muffin cups and place one pineapple ring on top of each.

  5. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
