- ½ cup unsalted butter (room temperature)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
- Sift the almond flour and powdered sugar together three times.
- In a clean bowl, beat the egg whites until frothy. Add cream of tartar, gradually mix in granulated sugar until stiff peaks form.
- Gently fold in raspberry purée and rosewater into the egg whites.
- Pipe small circles onto prepared sheets, leaving space between each.
- Bake for 15-20 minutes until dry to the touch. Cool completely before removing.
- For the filling, beat butter, powdered sugar, vanilla extract, and remaining raspberry purée until smooth.
- Assemble by piping filling onto one macaron shell and sandwiching with another.
