  • 1 ½ cups finely ground almond flour
  • 1 ¾ cups powdered sugar
  • 4 large egg whites (room temperature)
  • 1 tsp cream of tartar
  • ½ cup granulated sugar
  • ½ cup raspberry purée (strained)
  • 1 tsp rosewater
  • ½ cup unsalted butter (room temperature)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift the almond flour and powdered sugar together three times.
  3. In a clean bowl, beat the egg whites until frothy. Add cream of tartar, gradually mix in granulated sugar until stiff peaks form.
  4. Gently fold in raspberry purée and rosewater into the egg whites.
  5. Pipe small circles onto prepared sheets, leaving space between each.
  6. Bake for 15-20 minutes until dry to the touch. Cool completely before removing.
  7. For the filling, beat butter, powdered sugar, vanilla extract, and remaining raspberry purée until smooth.
  8. Assemble by piping filling onto one macaron shell and sandwiching with another.
