  • 2 lbs fresh mussels
  • 1 cup dry white wine
  • 4 cloves garlic, minced
  • 2 shallots, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 4 medium Yukon Gold potatoes
  • Salt and pepper to taste
  • 2 tbsp unsalted butter
  • Oil for frying

Instructions

  1. Prepare the potatoes by washing and peeling them. Cut into thick strips and soak in cold water for at least 30 minutes.
  2. Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the soaked potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.
  3. In a large pot over medium heat, melt butter and sauté shallots and garlic until translucent (3-4 minutes).
  4. Add white wine and cleaned mussels to the pot. Cover tightly and cook until mussels open, about 5-7 minutes. Discard any that remain closed.
  5. Stir in chopped parsley just before serving alongside crispy fries.
