  • 1 lb fresh mussels (cleaned)
  • 1 can (28 oz) San Marzano whole tomatoes
  • 3 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves (torn)
  • 1/2 tsp red pepper flakes (adjust to taste)
  • Salt to taste

Instructions

  1. Rinse mussels under cold water, scrubbing off any grit. Discard open shells.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
  3. Pour in the canned tomatoes and crush them gently with a wooden spoon. Simmer for about 10 minutes until the sauce thickens.
  4. Add cleaned mussels to the sauce, cover, and cook for 5-7 minutes until they open.
  5. Meanwhile, boil salted water and cook spaghetti until al dente (about 8-10 minutes). Drain.
  6. Combine cooked spaghetti with the mussel sauce in the skillet over low heat for 1 minute.
  7. Just before serving, toss in fresh basil leaves for added aroma.
