- 1 can (28 oz) San Marzano whole tomatoes
- 3 cloves garlic (minced)
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil leaves (torn)
- 1/2 tsp red pepper flakes (adjust to taste)
- Salt to taste
Instructions
- Rinse mussels under cold water, scrubbing off any grit. Discard open shells.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant (about 1 minute).
- Pour in the canned tomatoes and crush them gently with a wooden spoon. Simmer for about 10 minutes until the sauce thickens.
- Add cleaned mussels to the sauce, cover, and cook for 5-7 minutes until they open.
- Meanwhile, boil salted water and cook spaghetti until al dente (about 8-10 minutes). Drain.
- Combine cooked spaghetti with the mussel sauce in the skillet over low heat for 1 minute.
