  • 4 boneless, skinless chicken breasts
  • 2 cups fresh button mushrooms, chopped
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil (plus extra for searing)
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • 1 tbsp cornstarch mixed with 2 tbsp cold water

Instructions

  1. Preheat oven to 375°F (190°C). Pat each chicken breast dry.
  2. In a skillet over medium heat, add olive oil and sauté chopped mushrooms and minced garlic until golden brown (about 5 minutes). Add spinach and cook until wilted. Remove from heat and stir in Parmesan cheese and Italian seasoning.
  3. Carefully slice each chicken breast horizontally to create pockets and fill generously with the mushroom mixture.
  4. Sear the stuffed chicken in the skillet for 3-4 minutes on each side until golden brown.
  5. Transfer to a baking dish, add chicken broth around the breasts, cover with foil, and bake for 25-30 minutes until cooked through (internal temperature should reach 165°F or 74°C).
  6. Prepare sauce by adding lemon juice and cornstarch mixture to the remaining broth in the skillet; heat until thickened.
