  • 8 oz tortilla chips
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 medium ripe tomatoes, diced
  • 1/4 cup red onion, finely diced
  • 2 jalapeños, diced (fresh or pickled)
  • 1/4 cup fresh cilantro, chopped
  • 2 ripe avocados
  • 2 tbsp lime juice (divided)
  • 1/2 tsp salt (divided)

Instructions

  1. Preheat oven to 400°F (200°C). Spread tortilla chips evenly on a baking sheet.
  2. Sprinkle cheddar and Monterey Jack cheese generously over the chips.
  3. Bake for about 10 minutes until the cheese is melted and bubbly.
  4. While baking, prepare pico de gallo by mixing tomatoes, onion, jalapeños, cilantro, lime juice, and half of the salt in a bowl.
  5. In another bowl, mash avocados with remaining lime juice and salt until desired creaminess is achieved for guacamole.
  6. Once nachos are baked, remove from the oven and top with pico de gallo and guacamole. Serve warm.
