  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 medium sweet onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent. Stir in minced garlic until golden.
  2. Season chicken breasts with salt and pepper; add to the pot. Sear each side for about 4-5 minutes until browned.
