  • 4 (6 oz) fresh salmon fillets
  • 1 cup pomegranate juice (100% pure)
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup pomegranate seeds for garnish
  • 2 green onions, thinly sliced for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the pomegranate juice, honey, garlic, soy sauce, and lemon juice to create the marinade.
  3. Place salmon fillets skin-side down on the baking sheet. Brush with olive oil and season with salt and pepper.
  4. Pour half of the marinade over the fillets; let them marinate for at least 15 minutes.
  5. Bake salmon in the preheated oven for 12-15 minutes until it flakes easily but remains moist.
  6. Brush cooked salmon with remaining marinade; optionally broil briefly for caramelization.
  7. Garnish with pomegranate seeds and green onions before serving.
