  • 1 lb ground pork
  • 1 cup grated Granny Smith apples (about 2 apples)
  • 1/4 cup fresh sage, chopped
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup low-sodium chicken broth
  • 2 tbsp balsamic vinegar

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. In a skillet, heat olive oil over medium heat. Sauté the diced onion until soft and translucent, about 5 minutes.
  3. 3. In a large bowl, combine ground pork, grated apples (peeled), chopped sage, sautéed onions, breadcrumbs, minced garlic, egg, salt, and pepper. Mix well using your hands without overmixing.
  4. 4. Shape into golf ball-sized meatballs (about 1 oz each) and place them on the prepared baking sheet.
  5. 5. Bake for 20-25 minutes until golden brown and cooked through (internal temperature should reach at least 160°F).
  6. 6. While baking, prepare the sauce by simmering chicken broth and balsamic vinegar in a saucepan over medium heat for about 5 minutes until thickened.
