- 1 cup pineapple juice
- 1/4 cup low-sodium soy sauce
- 1/2 cup dark brown sugar
- 4 cloves garlic, minced
- 1 medium yellow onion, chopped
- 1 cup bell peppers, chopped (mixed colors)
- 1 tsp black peppercorns, crushed
- 2 tbsp vegetable oil
- Water (as needed)
Instructions
- Prepare your ingredients by chopping the garlic and onion. Measure out the liquids.
- In a bowl, combine the pork shoulder with pineapple juice, soy sauce, brown sugar, minced garlic, and crushed black peppercorns. Allow marinating for at least 30 minutes.
- Heat oil in a large skillet over medium heat. Sauté onions until translucent and fragrant.
- Add the marinated pork with all the marinade into the skillet. Stir well to coat evenly.
- Once the pork begins to brown, add chopped bell peppers and cook until tender-crisp.
- Pour in enough water to cover half of the pork mixture if necessary, reduce heat, cover, and simmer for about 45 minutes until fork-tender.
