  • 2 lbs pork shoulder
  • 1 cup pineapple juice
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup dark brown sugar
  • 4 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 tsp black peppercorns, crushed
  • 2 tbsp vegetable oil
  • Water (as needed)

Instructions

  1. Prepare your ingredients by chopping the garlic and onion. Measure out the liquids.
  2. In a bowl, combine the pork shoulder with pineapple juice, soy sauce, brown sugar, minced garlic, and crushed black peppercorns. Allow marinating for at least 30 minutes.
  3. Heat oil in a large skillet over medium heat. Sauté onions until translucent and fragrant.
  4. Add the marinated pork with all the marinade into the skillet. Stir well to coat evenly.
  5. Once the pork begins to brown, add chopped bell peppers and cook until tender-crisp.
  6. Pour in enough water to cover half of the pork mixture if necessary, reduce heat, cover, and simmer for about 45 minutes until fork-tender.
