- In another bowl, mix pumpkin puree, sugar, eggs, and oil until smooth. Stir in vanilla extract.
- Combine the wet ingredients with the dry ingredients gently until just mixed.
- In a small bowl, blend softened cream cheese with powdered sugar and vanilla until smooth.
- Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture on top, then swirl with a toothpick. Top with remaining batter.
- Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
