  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • 2 large eggs
  • ⅓ cup vegetable oil
  • 4 oz cream cheese (softened)
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix pumpkin puree, sugar, eggs, and oil until smooth. Stir in vanilla extract.
  4. Combine the wet ingredients with the dry ingredients gently until just mixed.
  5. In a small bowl, blend softened cream cheese with powdered sugar and vanilla until smooth.
  6. Fill each muffin cup halfway with batter, add a dollop of cream cheese mixture on top, then swirl with a toothpick. Top with remaining batter.
  7. Bake for 20-25 minutes until golden brown and a toothpick inserted comes out clean.
