  • 1 cup canned pumpkin puree
  • 8 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cloves
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly spray with nonstick cooking spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and cloves.
  3. In another bowl, beat pumpkin puree, sugar, eggs, and vanilla until smooth. Blend in softened cream cheese until combined.
  4. Gradually add dry ingredients to the wet mixture, stirring gently until just combined—don’t overmix.
  5. Fill each muffin cup about two-thirds full and add a dollop of cream cheese mixture on top.
  6. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool slightly before transferring to wire racks.
