  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • For rolling: 1/4 cup granulated sugar + 2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg and pumpkin puree until smooth.
  3. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually add to the wet mixture until just combined.
  4. Roll tablespoon-sized balls of dough in the cinnamon-sugar mixture before placing them on the prepared baking sheets about two inches apart.
  5. Bake for about 10 minutes or until lightly golden around the edges but still soft in the center. Let cool on a wire rack.
