- 1 cup quinoa
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes with juices
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers (mixed colors), chopped
- 2 cups vegetable broth
- 2 tbsp taco seasoning
- Juice of 1 lime
- 1 tbsp olive oil
Instructions
- Rinse quinoa under cold water in a fine-mesh strainer.
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until fragrant (about 2 minutes). Add bell peppers and cook for another minute.
- Stir in rinsed quinoa, black beans, corn, diced tomatoes, vegetable broth, and taco seasoning.
- Bring to a boil over high heat. Once boiling, reduce heat to low and cover. Simmer for 15-20 minutes until quinoa is fluffy and liquid is absorbed.
- Remove from heat and stir in lime juice. Fluff with a fork before serving.
