  • 1 cup quinoa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes with juices
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers (mixed colors), chopped
  • 2 cups vegetable broth
  • 2 tbsp taco seasoning
  • Juice of 1 lime
  • 1 tbsp olive oil

Instructions

  1. Rinse quinoa under cold water in a fine-mesh strainer.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until fragrant (about 2 minutes). Add bell peppers and cook for another minute.
  3. Stir in rinsed quinoa, black beans, corn, diced tomatoes, vegetable broth, and taco seasoning.
  4. Bring to a boil over high heat. Once boiling, reduce heat to low and cover. Simmer for 15-20 minutes until quinoa is fluffy and liquid is absorbed.
  5. Remove from heat and stir in lime juice. Fluff with a fork before serving.
