Description

Raspberry mousse is a light and airy dessert that captures the essence of summer in each delightful bite.   • 1 cup fresh raspberries (or frozen)
  • 1 cup heavy cream
  • 1/3 cup granulated sugar (divided)
  • 1 tsp pure vanilla extract
  • 1 tbsp unflavored gelatin powder
  • 2 tbsp warm water

Instructions

  1. Rinse the raspberries and pat them dry. In a large mixing bowl, whip the heavy cream with half of the sugar until soft peaks form.
  2. In another bowl, mash the raspberries until smooth, leaving some chunks if desired.
  3. Gently fold the raspberry mixture into the whipped cream along with vanilla extract and remaining sugar.
  4. In a small bowl, dissolve gelatin in warm water according to package instructions and mix it into the raspberry-cream blend.
  5. Spoon the mousse into serving glasses and refrigerate for at least four hours or until set. Serve chilled with fresh raspberries or whipped cream as garnish.
