- 1 cup powdered sugar
- 2 tbsp softened butter
- 1/2 tsp vanilla extract
- 1/4 tsp peppermint extract
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a large bowl, cream the softened butter and granulated sugar until fluffy. Add the egg and mix well.
- Stir in the buttermilk, vanilla extract, and peppermint extract until combined.
- Gradually add the dry ingredients to the wet mixture until just blended.
- Scoop equal amounts of batter onto the prepared baking sheets and bake for 10–12 minutes or until edges are set.
- Let cookies cool completely on wire racks.
- For the filling, mix cream cheese, powdered sugar, softened butter, vanilla extract, and peppermint extract until smooth.
- Spread or pipe filling onto one cooled whoopie pie half and top with another half.
