Description

  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter (melted)
  • 1 cup granulated sugar (divided)
  • 16 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries (pureed)
  • 1 cup fresh blueberries (pureed)

Instructions

  1. Preheat your oven to 325°F (160°C) and line an 8×8-inch baking dish with parchment paper.
  2. For the crust: Mix graham cracker crumbs, melted butter, and 2 tbsp sugar in a bowl. Press into the bottom of the baking dish.
  3. For the filling: Beat cream cheese and remaining sugar until smooth; add vanilla extract and mix well.
  4. Create fruit purees by blending strawberries and blueberries separately until smooth.
  5. Layer half of the cheesecake filling over the crust, swirl in strawberry puree followed by blueberry puree, then top with remaining cheesecake mixture.
  6. Bake for 35-40 minutes until set but slightly jiggly in the center. Cool before refrigerating for at least 2 hours.
