  • 1/4 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar (light)
  • 1/2 cup all-purpose flour
  • 1 tsp cinnamon
  • 1/2 cup unsalted butter, cold

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine chopped rhubarb, granulated sugar, and 1/4 cup flour; toss to coat.
  3. In another bowl, mix rolled oats, brown sugar, 1/2 cup flour, cinnamon, and cold butter until crumbly.
  4. Pour the rhubarb mixture into an 8×8 baking dish and evenly distribute the oat topping on top.
  5. Bake for 35-40 minutes until the top is golden brown and filling bubbles.
