  • 1/2 cup low-sodium soy sauce
  • 1/4 cup mirin
  • 2 tbsp fresh ginger (grated)
  • 4 garlic cloves (minced)
  • 2 tbsp honey
  • 2 tsp sesame oil
  • 4 green onions (sliced)
  • Freshly cracked black pepper (to taste)
  • Cilantro (optional, for garnish)

Instructions

  1. Prepare the marinade by whisking together soy sauce, mirin, ginger, garlic, honey, and sesame oil in a bowl.
  2. Marinate the chicken in the mixture for at least 2 hours or overnight in the refrigerator.
  3. Preheat your oven to 375°F (190°C).
  4. Remove the chicken from the marinade and pat dry. Place it breast-side up in a roasting pan and scatter sliced green onions around it.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting occasionally with leftover marinade.
