  • 2 lbs boneless, skinless chicken thighs
  • 2 large fresh oranges (zest and juice)
  • 4 garlic cloves, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup raw honey
  • 1 tbsp fresh ginger, grated
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season the chicken thighs with salt and pepper and place them in the baking dish.
  3. In a bowl, whisk together orange zest, orange juice, soy sauce, honey, minced garlic, and grated ginger until well blended.
  4. Pour half of the marinade over the chicken thighs. Reserve the other half for later.
  5. Roast in the preheated oven for 30-35 minutes until the internal temperature reaches 165°F (74°C).
  6. Drizzle reserved marinade over the chicken and roast for an additional 5-10 minutes until caramelized.
  7. Serve garnished with fresh orange slices or chopped green onions alongside rice or steamed veggies.
