  • 2 large red bell peppers
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place the red bell peppers on it. Roast for 25-30 minutes until the skins are blistered.
  2. While the peppers roast, heat olive oil in a skillet over medium heat. Sauté the chopped onion and minced garlic until golden brown and fragrant (about 5 minutes).
  3. After roasting, let the peppers cool slightly before peeling off their charred skins and removing stems and seeds.
  4. In a blender, combine the roasted peppers, sautéed onions, garlic, lemon juice, salt, and pepper. Blend until smooth; add more olive oil for a silkier texture if desired.
  5. Adjust consistency by adding water or stock as needed. Serve over pasta or grilled meats.
