Ingredients
Scale
- 2 large red bell peppers
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1 medium yellow onion, chopped
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper (adjust to taste)
- 2 tablespoons fresh lemon juice
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place the red bell peppers on it. Roast for 25-30 minutes until the skins are blistered.
- While the peppers roast, heat olive oil in a skillet over medium heat. Sauté the chopped onion and minced garlic until golden brown and fragrant (about 5 minutes).
- After roasting, let the peppers cool slightly before peeling off their charred skins and removing stems and seeds.
- In a blender, combine the roasted peppers, sautéed onions, garlic, lemon juice, salt, and pepper. Blend until smooth; add more olive oil for a silkier texture if desired.
- Adjust consistency by adding water or stock as needed. Serve over pasta or grilled meats.
