Ingredients

  • 3 tbsp rice vinegar

  • 1 small cucumber

  • 2 tbsp low-sodium soy sauce
  • 2 green onions

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions (about 20 minutes).
  2. While the rice cools, season salmon with salt and pepper, then sear in sesame oil over medium heat for about 2 minutes per side until golden.
  3. Spread cooled sushi rice into a greased baking dish, pressing down gently to form an even layer.
