  • 8 oz pasta (spaghetti or fusilli)
  • 14 oz firm tofu, pressed and cubed
  • 1/3 cup tahini
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp lemon juice
  • 2 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • Water (as needed for sauce consistency)

Instructions

  1. Press the tofu by wrapping it in a clean towel and placing a heavy object on top for 15 minutes.
  2. Boil salted water in a large pot, add pasta, and cook until al dente. Reserve 1/2 cup pasta water before draining.
  3. In a skillet over medium-high heat, sauté cubed tofu in olive oil until golden brown, about 7 minutes.
  4. In a bowl, whisk together tahini, soy sauce, lemon juice, garlic, and enough water to achieve your desired sauce consistency.
  5. Combine drained pasta and tahini sauce in the pot over low heat. Toss until fully coated; add reserved pasta water if necessary.
  6. Serve topped with crispy tofu cubes and garnish with sesame seeds or green onions if desired.
