- 9 lasagna noodles (traditional or no-boil)
- 1 lb mixed seafood (shrimp, scallops, crab meat)
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- ¾ cup grated Parmesan cheese
- 3 cloves garlic (minced)
- 2 cups fresh spinach (chopped)
- 2 cups marinara sauce
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and minced garlic. Sauté mixed seafood for 3-5 minutes until just cooked. Set aside.
- In a bowl, mix ricotta cheese with half of the mozzarella, half of the Parmesan, salt, pepper, and chopped spinach.
- Spread a layer of marinara sauce in a baking dish. Layer noodles, half of the seafood mixture, then half of the cheese mixture. Repeat layers ending with noodles topped with remaining sauce and cheeses.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
- Let cool for five minutes before slicing and serving.
