  • 1.5 lbs pork tenderloin
  • 1/4 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 4 medium carrots, chopped
  • 1 lb Yukon gold potatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix maple syrup, Dijon mustard, salt, pepper, and rosemary. Coat the pork tenderloin evenly and let marinate for 15 minutes.
  3. Chop carrots and potatoes into uniform pieces. Toss them in olive oil, salt, and pepper until well coated.
  4. Place the marinated pork in the center of the baking sheet and surround it with the seasoned vegetables.
  5. Roast for 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C). Let rest for 5 minutes before slicing.
