  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 cup shrimp, peeled and deveined
  • 2 green onions, chopped
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil (for cooking)

Instructions

  1. Gather and prep all ingredients: chop green onions, mince garlic and ginger, and thaw shrimp if frozen.
  2. Heat a large skillet or wok over medium-high heat. Add vegetable oil until shimmering.
  3. Sauté minced garlic and ginger for about a minute until fragrant.
  4. Add shrimp to the pan and cook for 3 minutes until pink; remove and set aside.
  5. Stir-fry frozen vegetables with half of the green onions for about 2 minutes.
  6. Add cooked rice to the pan; break up clumps while stirring to combine with veggies.
  7. Pour in soy sauce and sesame oil; mix well before adding back shrimp and remaining green onions.
  8. Stir-fry for an additional 2 minutes until everything is heated through.
